RECIPE VIDEO: Monica cooks isolation paella!

Co-founder & chef Monica Gil Ruiz makes her first ever recipe video, sharing some of her top paella cookery tips, and also using up leftovers from the fridge while in self-isolation!

To cook along with her recipe you will need, approximately:

1/2 an onion, diced
1/2 x pepper, diced (or a couple of left over pieces, red, green or yellow)
A handful of mushrooms, sliced
1 large clove of garlic, crushed
A splash of white wine or sherry
2 cooking chorizo, peeled and roughly chopped (optional!)
200g chopped tomatoes
200g paella rice
425ml chicken or vegetable stock
1 tsp sweet paprika
A pinch of hot paprika
2 tsps pimento choricero paste (optional)
A handful of cherry tomatoes, halved
A handful of pitted olives, green, black or both
A small cup full of frozen peas

Salt & pepper to taste
